Pectinesterase (PE), also known as pectin methylesterase and pectin oxidase, is widely found in plants and microorganisms. Pectin is one of the main components of plant cell wall, and pectin esterase catalyzes the hydrolysis of methoxyester of pectin to produce pectin acid and methanol, which plays an important role in the cell wall metabolism of plant fruit ripening, and has an extremely important role and development prospect in the food industry. In the process of pectin hydrolysis catalyzed by pectin esterase, H+ is released, and the pH value of the reaction system is reduced. The pH value of the reaction system is maintained at 7.8 by adding lye. The amount of lye consumed to maintain pH can reflect the activity of pectin esterase.

Note: Before the experiment, it is recommended to select 2-3 samples with large expected differences for pre-experiment. If the absorption value of the sample is not within the measurement range, it is recommended to dilute or increase
