Product Introduction
We modified the traditional AACC76-11 assay so that thermostable alpha-amylase and amyloglucosidase can be incubated at the same pH (pH=5.0), which simplifies the assay process and minimizes the possibility of maltolose formation. The total starch kit can determine most food, feed, plant and grain products (natural or processed), and for most samples (such as wheat flour), the starch will be completely dissolved in incubation (about 100 ℃ with heat-resistant α-amylase); For samples containing a large amount of resistant starch (such as high amylose corn starch), 1.7M NaOH or hot DMSO should be pre-dissolved; However, samples containing soluble starch or maltodextrin do not need to be treated with heat-resistant -amylase.
