Product Introduction
The most common method for the determination of amylose in cereal starch is to measure the iodine-binding capacity of amylose starch by potentiometric, current or colorimetric methods to form amylose - iodine inclusion complex. However, there are uncertainties in these approaches. Amylopectin - iodine complexes also form, which reduce the concentration of free iodine measured by non-colorimetric methods and may be absorbed at wavelengths similar to those of amylopectin - iodine complexes in colorimetric methods. In this kit, concanavin A is separated by the characteristic that it only binds to amylopectin but not amylose. Then, the enzyme complex that only hydrolyzes starch is used to hydrolyze starch to glucose. The content of amylose, branched chain and total starch is obtained by detecting the content of glucose.
