Ascorbic acid (AsA) is a coenzyme, free radical scavenger, electron common-acceptor and substrate of oxalate and tartrate biosynthesis. As the most important antioxidant in plant cells, AsA plays an important role in protecting chloroplasts from oxidative damage and is also an important indicator of crop product quality. Dehydroascorbic acid (DHA) is the reversible oxidizing form of ASA. In vivo, dehydroascorbic acid and AScorbic acid together form a REDOX system and act as electron acceptor.
ASA is reductive and can reduce Fe3+ to Fe2+, which forms a pink complex with 2,2 '-bipyridine and has a characteristic absorption peak at 525nm. DTT can reduce DHA and produce ASA, which can be used to detect the content of total ascorbic acid (ASA+DHA) in S.
